Carrot Cake Recipe:

– 2 cups grated carrots

– 1 cup crushed pineapple, drained

– 1 cup chopped nuts (walnuts or pecans)

– 2 cups all-purpose flour

– 1 cups granulated sugar

– 1 cup brown sugar

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1 1/2 teaspoon ground cinnamon

– 1/2 teaspoon ground nutmeg

– 1/2 cup vegetable oil

– 4 large eggs

– 1 teaspoon vanilla extract

Cream Cheese Frosting:

– 8 oz cream cheese, softened

– 1/2 cup butter, softened

– 4 cups powdered sugar

– 1 teaspoon vanilla extract

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans for easy removal of the finished cakes.

2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.

3. In another bowl, combine the grated carrots, crushed pineapple, and chopped nuts.
